Can you please help me to know the communication method used in the communication between different OPC servers?
OPC servers do not communicate with one another. OPC clients and OPC servers can communicate to each other and they use COM (Component object model).
Check this site out about Understanding OPC.

I am just reading the basics of OPC. Could someone provide me with examples of OPC servers and OPC clients? Can we see them physically? I read OPC server is only a software and not a device. Is it right?
Correct Software. Do you have an actual application your considering to use OPC with, like PLC, RTU other ?

To get some hands on experience, you can download a fully functioning 30-day trial Modbus/TCP OPC Server and OPC Client here:
If you do not have a Modbus/TCP device, the OPC Server includes simulation mode so no hardware devices are needed. Or, if you prefer to use a Modbus/TCP device, you can download Modbus/TCP Server software here:
Both can run on the same PC.

There are a number of OPC Foundation Videos out there. You may want to check out this overview on their site.
There is also a new one on OPC UA, which is quickly catching hold as the new standard. See the first video.
